You will be surprised; right… And we were taken aback too. But that’s exactly happened when we visited the authentic Japanese Restaurant Fuji in New Delhi recently.
Well, in Japan, Zashiki is a kind of sitting room with minimal décor, covered in tatami mats which has low traditional tables with cushions to sit on the floor. And to give it is patron a real feel, Fuji has a zashiki room along with western style tables and chairs. And to experience zashiki style seating, you have to remove your shoes before stepping onto the sitting area.

As soon as we entered the restaurant, we were greeted with “irasshaimase”, an expression meaning “welcome, please come in”. We chose to experience the zashiki style of sitting and were then taken through a wondrous foodie journey of exotic food preparations presented in the most artistic way.

The traditional cuisine of Japan, washoku is based on rice with miso soup and other dishes; there is an emphasis on seasonal ingredients. Dishes consisting of fish, pickled vegetables, and vegetables cooked in broth and also deep-fried in a light batter, as tempura are often served. Apart from rice, staples include noodles, such as soba and udon.
